斥資近2億元打造！「宇方圓」信義區頂級會所餐廳進駐微風松高！13間包廂結合精緻粵菜與社交娛樂

台北高端餐飲市場再添新選擇！斥資近2億元打造的「宇方圓」日前於台北微風松高的地下2樓正式開幕，融合高檔精緻中菜、13間包廂空間與KTV等社交娛樂功能等，鎖定商務宴客、私人聚會與高端社交需求，打造有別於傳統餐廳與私人招待所的新型態餐飲空間。

「宇方圓」由軒寓閣樓府旺股份有限公司投資成立，曾任嘉林餐飲、海峽會，且打造米其林三星Taïrroir 態芮餐廳的執行長林奕寬表示，早於疫情前，就有不少客人向他建議，過去不少企業主或私人聚會，往往需要先在餐廳用餐，再轉往私人招待所進行唱歌、打牌或其他活動，不僅需要移動，也容易打斷聚會節奏，因此，希望有融合高端餐飲、社交娛樂的高端餐飲空間，因此，自2022年起籌備超過3年時間，終於開設了「宇方圓」。

不同於一般餐廳，位於台北微風松高地下2樓的「宇方圓」擁有約500至800坪空間，並設有專屬車道直達餐廳，兼顧交通便利與隱私，全館規劃13間包廂，從10人小型聚會至30人大型宴會皆能彈性運用，並透過挑高格局、雙層天花及聲學工程，降低包廂間的聲音干擾。除了用餐，部分包廂亦具備視聽、桌遊及娛樂機能，讓商務洽談、私人聚會與餐後交流都能在同一空間延續。

至於菜色，「宇方圓」由曾任職於新加坡四季酒店、紐約華爾道夫酒店與曼谷文華東方酒店的鄺啟明擔任廚藝總監，吳宇軒則是行政主廚，兩人以粵菜為基礎，結合不同中菜技法與西式料理概念在開幕之初，推出「燶邊叉燒皇」、「三弄砂鍋濃湯干貝燉富貴雞」、「玫瑰醋栗靚蝦球」、「鬼佬酒醋小炒骨」及「惹味烏參海鮮餃」等菜色。

而一道「法國皮蒂維亞和牛鹹派」以西式威靈頓牛排為靈感重新設計的菜色，選用美國菲力，外層不採傳統的鵝肝與蘑菇，而是融入中菜元素，以乾貨等食材重新打造風味層次，再透過菠菜包覆肉品，減少肉汁滲出對酥皮口感的影響，呈現中菜與西式料理技法交融的風格，一道「純粹螺頭湯」則以甘蔗雞慢火熬製湯底，加入瑤柱與蝦乾提鮮，再放入螺頭浸煮，讓雞肉的醇厚與海味的鮮甜層層交融，品嘗時，更能感受湯頭清澈，入口鮮甜，尾韻溫潤。

而餐後甜點也延續中西融合概念，其中「情人果檸檬塔」以醃製情人果搭配柑橘冰，並加入40年陳皮，透過酸甜、冰涼與陳皮香氣交織，作為餐後收尾。
