台中「夏登法式鐵板燒」餐廳一週年！秋季菜單主打油封鴨腿、日本A5和牛雙主菜

正值時節步入秋天，台中「夏登法式鐵板燒」也迎來開幕一週年，於此同時，餐廳同步推出「燻香醇韻－秋季風土」的秋冬全新菜單，以煙燻、香草、栗子、南瓜等多種時令食材入菜，除打造多達11道的法式鐵板燒套餐，另也主打包含「香煎油封鴨腿」與「日本A5和牛」的雙主菜的組合。

「夏登法式鐵板燒」位於台中南屯大業路，且鄰近七期商業區，以獨立歐式宅邸與門前香草花園為特色，料理則結合法式技法與鐵板烹調，並隨著季節更換菜單，自2025年9月開幕以來，全採預約制的服務方式，成功建立穩定的來客數，不僅據統計一年可近4,600萬，甚至也擴增不少來自韓國、香港等地的外國消費者，是台中鐵板燒餐廳的資優生。

而近期時節入秋，在全新推出的「燻香醇韻－秋季風土」菜單中，由行政主廚莊濟澤操刀設計，多達11道菜色，以「煙燻鴨胸・迷你塔塔」揭開序幕，品嘗時，不只感受煙燻鴨胸帶出深沉肉香，再搭配葡萄、紫洋蔥、紅酒醋與鴨油蛋黃醬，也能體驗果實酸甜與辛香調性拉開鴨肉的濃郁感。

接續登場的「栗子松露百里香雞湯」，以雞骨熬製湯底，加入栗子、少量南瓜泥、雞胸與炙燒水果玉米，再以松露與百里香增添香氣，讓品嘗雞湯的清鮮時，也能帶出栗子與南瓜的自然甜味，為秋季料理增添溫暖氣息。

而一道「嫩煎旗魚・煙燻甜椒蛋黃醬」，則以鐵板煎出旗魚表面的焦香，保留魚肉內裡的柔嫩與油潤，再搭配煙燻甜椒蛋黃醬、青花椒與醃漬紫洋蔥，融合煙燻、辛香、酸度，以及旗魚的鮮美。

而緊接的海鮮菜色還包含「日本播磨生蠔・昆布荷蘭醬」，將生蠔煎後，搭配昆布荷蘭醬與厚切培根，最後點入少量山椒油，讓辛香平衡奶油與海味；「南非活鮑魚・天鵝絨白醬」則以香煎鮑魚搭配菌菇與天鵝絨白醬，再以百里香、檸檬皮提亮尾韻；「根島生態蝦・蕃茄甜椒醬」則透過火烤甜椒、番茄與百里香熬製醬汁，以酸甜果香襯托蝦肉的鮮甜。

主菜部分則是一道「油封鴨腿・帕達諾起司・金桔醬」，以經典法式油封技法料理鴨腿，讓月桂葉、迷迭香與黑胡椒在低溫烹調中逐漸釋放香氣，再於鐵板煎出酥香外皮，主廚特別加入現刨帕達諾起司，增加熟成乳香與鹹香，並搭配台灣客家料理中常見的桔醬，以柑橘果酸與微微果皮苦韻切開鴨脂的豐厚感。

另一道「日本A5和牛沙朗」，則以鐵板乾煎方式讓細緻油花隨著熱度逐漸化開，再以迷迭香與白蘭地點火，帶出草本與酒香，並佐上現炒巴西里蒜仁、馬爾頓海鹽，讓牛肉本身的甘甜與油脂輪廓更加鮮明。

除了葡萄酒，餐廳也提供英國SAICHO零酒精茶香檳作為餐搭選擇，其中大吉嶺口味帶有麝香葡萄、柑橘香氣與乾爽茶單寧，適合搭配油封鴨腿、日本A5和牛等油脂較豐潤的料理，讓不飲酒的消費者同樣能享受完整的餐酒搭配體驗。

迎接開幕滿一週年，凡消費「夏登法式鐵板燒」「燻香醇韻－秋季風土」的秋冬全新菜單，於即日至2026年9月30日加碼送上北海道干貝，並安排與「金秋南瓜菲塔起司花園沙拉」一同呈現。
